Annoying mushroom fake-out!

Recommended Posts

So I was walking through the woods by a lake and caught a glimpse through the trees of a brilliant red and yellow wedge shaped projection coming out of a log. I started towards it briskly, salivating at the thought of all the things I might do with a nice chicken mushroom.

Instead, this. Augh! Rotten kids and their abandoned swim wear, which happened to be exactly the same color and left in the same profile as a choice mushroom.

Fortunately on the mushroom walk I attended the next day, a very kind collector donated one to the cause so that I could cook it up for everyone to enjoy at next week's mushroom class at the Pickard Eco-Institute. Yay!

chef...just a word regarding condition of chickens, the best time to harvest (if at all possible) is when they are in the "circus peanut" stage of growth, soft, moist and puffy. Once they flatten out like this, they tend to get very woody and tough quickly.

@ladyflyfsh, thanks for the advice! I actually very much appreciate their texture at this stage, as it allows me to do a two-stage cook with the first stage in savory liquid and the second in butter or oil. The result is very meat-like and delicious.
